Preparation :
1. Refer "Cooking Preparations"
2. Boil the crush rock sugar in 4 bowls of water. Then, filter the sugar syrup (which may contains dirt particles). Set aside.
3. Soak White Fungus, clean and shred into small pieces.
4. Boil the White Fungus over Medium heat for 1 hour.
5. Mix the bird nest in inner pot of a double-steaming pot with the sugar syrup (from step 2) and the White Fungus (from step 4).
4. Bring the outer pot of water to boil and simmer (over low heat) the bird's nests for about 30-40 minutes .
5. Ready to serve either as hot or cold dessert.
