The Proper Way to Double-Boiling Bird's Nest  


The two most crucial factors that can affect double-boiling bird's nest.

(2) CONTROLLING THE HEAT

 

It is important to control the heat while double-boiling the bird nest. Double-steaming bird nest over low heat will keep the internal temperature of the inner double-boiling pot at around 80 degree Celcius, which not only prevents bird nest from dissolving but also retains valuable proteins and nutrients.  If double-boiling for too long, the bird nest may turn watery, those proteins and nutrients will be destroyed during the cooking process.

 

Please refer to soaking and cooking time for various grades of bird nest as mentioned above.

 

Important Note:  Never heat bird nest in a microwave oven.  Beware not to dry it by baking or by direct sunlight.
